I love a marinade, especially in the summer. They add so much flavor and goodness to simple grilled meats. I mean, when dinner only has to take a few minutes and still tastes crazy good and is healthy to boot you know you have a winner.

Let’s start out by saying this marinade is PEPPERY. Those that know me know I love me some black pepper. I put it on everything. Seriously, on all the things. If you don’t dig that spicy, peppery kick this is not the recipe for you.

But it doesn’t just bring a peppery flavor. The red wine vinegar adds a really nice, fresh zing to the peppercorn marinade. There’s also a bit of Dijon mustard going on that brings some tanginess and sharpness.

It’s just all so good together and has become my official favorite summer marinade.

This black peppercorn marinade is sooo good on chicken, steak, pork and even vegetables. Throwing them on the grill after marinating puts them totally over the top.

Another amazing thing about this marinade, you toss it all in a mason jar and shake away. And done. You can whisk it in a bowl too if that’s your thing. The point, it only takes the time it takes you to measure the ingredients. 

You can marinate as little as an hour with great flavor or up to overnight for a huge black pepper punch. So no matter what amount of time or planning situation you have going on, you can make this black peppercorn happen.

Ingredients

  • 1/2 tsp. kosher salt
  • 1 Tbsp. black peppercorns
  • 2 Tbsp. coarse black pepper
  • 1 Tbsp. Dijon mustard
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2-3 cloves garlic, chopped

Instructions

  • Add everything to a mason jar, close lid and shake well. Or whisk everything together in a bowl. Marinate chicken, beef, pork or veggies for 8 hours or up to overnight in the refrigerator.

    There was a beef dish that was strongly flavoured with black pepper that I loved ordering in Cambodia. I brought back some Cambodian black peppercorn, I bet it would make great use in this recipe!

    I’ve been stocking up for years, on Webers Black peppercorn Marinade. They recently discontinued it, bummer for me…so I searched and your recipe popped up. The only thing I can tell different, is the mustard. Will definitely be trying this out once my last pouch is gone…thanks for posting!!!

    1. That is such a bummer. I hate when that happens! This is actually inspired by a black peppercorn marinade that comes in a packet (I can’t remember the brand) so I’m betting it’ll be pretty close. I hope you love it and that it’s a good sub for your favorite marinade!

    2. I also loved that marinate pack and I have been looking all over for it. Did not realize it was discontinued. What a shame. It was the best! Looking for something like it is what has brought me here. I’m going to try this tonight.

    3. Weber Black Peppercorn Marinade was our absolute favorite! It was delicious on tri-tip! We haven’t been able to find anything that comes close to it flavor wise.

  3. I made this last last night using chicken thighs. It was a big hit and everyone raved about this. It smelled delicious while it was on the grill and did not disappoint in any way. Who needs Weber when you have this great recipe. Thanks so much for sharing!

    My mom would marinade her Sunday roast in a marinade but it was discontinued. This recipe tasted just like it. Maybe better! I make roast then use leftovers by making a spin on the classic Philly cheese steak sandwich.

    Marinating for one hour gives it no flavor at all.
    You would have to marinate overnight .
    Will try the overnight marinade next time.

    I MARINATED MY STEAKS FOR OVER 2 HOURS.
    IT WOULD HAVE TO MARINATED OVERNIGHT IN ORDER TO HAVE ANY FLAVOR.
    GOING TO TRY AND DO THIS ………………….BUT 2 HOURS DIDN’T DO ANYTHING.

  8. I used grill creations by durkee black peppercorn marinade then webers. How come they took them from us???. I look forward to trying this on chicken, pork and of course steaks. Ill give a star rating after I try it. Thx ahead of time.
