No Bake Coconut Chocolate Chip Granola Bars

No Bake Coconut Chocolate Chip Granola Bars make the perfect after school snack or lunch box treat. Made with healthy, clean ingredients you can feel good about feeding your kids (and yourself). 

In this family, we like snacks. Potato chips are my downfall. I’m all about the salty. Set a plate of cookies in front of me and I can totally resist them but leave a bag of chips in the pantry? Self-control? Nope. Not happening.

And my kids? It doesn’t matter what it is as long as it’s unhealthy and 30 minutes until dinnertime. Well, they like healthy snacks too but they’ll reach for the junk before the fruit or veggies.

With the school schedule in full swing and a kiddo that sometimes spends too much time chatting and not enough time eating at lunch, after school snacks are very important. As much as I love an easy to grab snack, they usually aren’t the healthiest so I’ve been trying to have batches of healthy, homemade snacks on the ready when we get home from school.

Energy balls (they tastes like no-bake cookies guys) and homemade fruit leather are big favorites around here that are pretty simple to whip up and can be made in big batches to last all week. 

Granola bars are a big favorite around here so I decided to make a homemade no-bake version with some of our favorite granola bar ingredients. Coconut, chocolate chips and almonds always belong together in a granola bars.

Not only are these No Bake Coconut Chocolate Chip Granola Bars homemade but they use clean, healthy ingredients (except for the small amount of mini chocolate chips). And you might want to make a double batch because they won’t last long.

My first batch was gone in less than 2 days between snacks and lunch box so I can definitely say they were a success on the kid front. 

One thing I have to stress with these granola bars is that they can fall apart somewhat easily so you really have to press them firmly into the pan and give them so time to chill before cutting them. This happens because of the use of old-fashioned oats rather than quick oats and the lack of corn syrup that helps other granola bars stick together. You could certainly substitute quick oats for the old-fashioned if you prefer. I like the chewy texture and nutty flavor the old-fashioned oats lend to these granola bars but you do you.

With the delicious, simple ingredient list and ease of preparation these granola bars will be an instant favorite with the whole family.

No Bake Coconut Chocolate Chip Granola Bars

Ingredients

  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt
  • 1 1/3 cups old-fashioned oats
  • 2/3 cup unsweetened shredded coconut
  • 1/3 cup sliced almonds
  • 1/4 cup mini chocolate chips

Instructions

  • Line an 8x8 pan with foil, leaving enough hanging off the edges to cover the top of the pan. Spray with nonstick spray. Set aside.
  • In a microwave safe bowl, combine coconut oil, honey, vanilla and salt. Microwave for 30 seconds to melt coconut oil fully. Stir well and set aside to cool slightly.
  • In a large bowl combine the oats, coconut and almonds. Drizzle liquid mixture over the oats mixture and stir well until fully combined. Stir in chocolate chips. 
  • Pour mixture into the prepared pan and spread evenly. Cover the bars with the extra foil and press firmly to compress the bars. Do this for a few minutes to get them to really stick together. Refrigerate for 15 minutes then slice into bars. Wrap tightly and refrigerate.
