Today I’m bringing you my official cocktail for the summer. These Mixed Berry Mojitos are light, refreshing and super simple to whip up for your next outdoor party.

I’m not a big drinker but I do have a few favorites that I indulge in every once in a while. And I have to say the mojito is my absolute favorite cocktail, especially in the summertime. A moscow mule comes in close second for me. 

While I love a classic mojito, I really wanted to bring home the summer flavors. Seeing that this is my third mixed berry recipe in a month you can probably tell I’m fully obsessed with berries right now (check out the others here and here). We’ve got to take advantage of all those sweet, delicious berries while they are at their peak. So I naturally thought going the berry route with this mojito was the right and only choice. Plus, berries pair so nicely with the fresh, zippy mint and lime in a mojito.

The base of the drink features a delicious mixed berry simple syrup. This is the most time-consuming part of the cocktail as it has to be prepared (about 10 minutes) then cooled before you can use it. With that in mind, I definitely recommend making it the day before as it will keep for quite some time in the refrigerator. Once the simple syrup is cooled, it’s a cinch to shake one up.

I can’t believe it’s taken me this long to mention this, but that color?! It’s so so pretty. How could you not want to indulgence in that?

Mixed Berry Mojitos

Yield: 1 drink

Ingredients

For the Mixed Berry Simple Syrup:

  • 1 1/2 cups water
  • 1 1/2 cups granulated sugar
  • 1 cup blueberries
  • 1 cup sliced strawberries

To assemble:

  • 6 mint leaves
  • 3/4 oz. lime juice
  • 1 oz. mixed berry simple syrup
  • 2 oz. white rum
  • Ice
  • 1 oz. club soda

Instructions

  • For the mixed berry simple syrup: bring water, sugar, blueberries and strawberries to a simmer. Cook for 10 minutes, smashing the berries as they soften. Place a fine mesh strainer over a clean bowl. Strain syrup. Store in an airtight jar in the refrigerator.
  • In a cocktail shaker, combine mint leaves, lime juice, simple syrup and white rum. Muddle mint leaves. If you don't have a muddler (I don't) use the end of a wooden spoon or something similar to break up the leaves a bit. Add ice to the cocktail shaker and put on lid. Shake about 30 seconds to chill.
  • Strain through top of the cocktail shaker and pour over ice. Top with club soda. Garnish with additional mint if desired.
