No Bake Coconut Chocolate Chip Granola Bars

  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt
  • 1 1/3 cups old-fashioned oats
  • 2/3 cup unsweetened shredded coconut
  • 1/3 cup sliced almonds
  • 1/4 cup mini chocolate chips


  1. Line an 8x8 pan with foil, leaving enough hanging off the edges to cover the top of the pan. Spray with nonstick spray. Set aside.

  2. In a microwave safe bowl, combine coconut oil, honey, vanilla and salt. Microwave for 30 seconds to melt coconut oil fully. Stir well and set aside to cool slightly.

  3. In a large bowl combine the oats, coconut and almonds. Drizzle liquid mixture over the oats mixture and stir well until fully combined. Stir in chocolate chips. 

  4. Pour mixture into the prepared pan and spread evenly. Cover the bars with the extra foil and press firmly to compress the bars. Do this for a few minutes to get them to really stick together. Refrigerate for 15 minutes then slice into bars. Wrap tightly and refrigerate.
