Preheat oven to 325 degrees F. Place rolls on a baking sheet and cook for 11-13 minutes.
Meanwhile, heat a skillet over medium heat. Add olive oil to skillet. Add ground turkey or beef and break up with a wooden spoon. Cook until no longer pink. Add tomato sauce and taco seasoning. Allow to simmer and thicken slightly. Remove from heat and stir in shredded pepper jack cheese. Set aside.
Stick olives on the ends of toothpicks.
Slice cooked rolls in half. Evenly divide the taco meat between the rolls. Top with desired amount of shredded lettuce then top with the top half of the roll. Stick two toothpicks into each slider and serve.
