Need a little energy boost or a healthy snack? These Strawberry Energy Balls are super simple to make and sweetly delicious to eat.

Ingredients

  • 1 1.2 oz. bag freeze dried strawberries
  • 1/3 cup roased, salted cashews
  • 1 cup pitted dates
  • 1/2 cup rolled oats
  • 1/2 cup peanut butter (or nut butter of choice)
  • 1 1/2 tsp. pure vanilla extract

Instructions

  • Place freeze dried strawberries in the food processor. Pulse until you have a fine powder. Add remaining ingredients and process until everything is finely chopped and a ball forms.
  • Using a cookie scoop, portion out the dough into 14 even sized balls. Roll in your hands to make them perfectly round. Store in an airtight container in the refrigerator.
