Grilled Chicken Caesar Salad Flatbread

With the popularity of chicken caesar wraps, we thought we would create a fun spin on them using delicious flatbread made from Rhodes white bread dough. This Grilled Chicken Caesar Salad Flatbread is super simple to make with just a handful of ingredients.

We know fall is on the horizon but we’re not quite ready to say goodbye to summer and our favorite thing about it, grilling. So while the weather’s still warm, let’s bust out the grill to make these delicious Grilled Chicken Caesar Salad Flatbread.

Ingredients for Grilled Chicken Caesar Salad Flatbread

This Caesar Salad Flatbread only requires a few easy to find ingredients. Here’s what you’re going to need:

Rhodes Bread Dough: Grab a pack of Rhodes bread dough loaves from the freezer section. You’ll need one loaf for this recipe. Keep the rest on hand to make more easy dinners, appetizers and desserts. Check at the end of this post for recipe ideas.

Caesar Salad Kit: I decided to cheat a bit and use a salad kit to make things super simple. Grab your favorite salad kit and toss it together for this recipe. You can also buy the individual ingredients and mix up your own caesar salad with romaine, parmesan, caesar dressing and croutons if you wish.

Caesar Dressing: You’ll also need a bottle of your favorite caesar dressing to marinate the chicken. You can also use it to add a drizzle to the finished flatbread if you like a little extra dressing.

Boneless Skinless Chicken Breast: Use one or two chicken breasts for this recipe, depending on their size and the amount of chicken you want on your flatbread. The chicken will be marinated in caesar dressing to give extra flavor.

Prep the Bread Dough

The first thing you need to do is rise the bread dough. Spray a loaf pan with non stick spray then add one loaf of frozen bread dough to the prepared pan. Cover with plastic wrap and allow to rise until doubled in size.

The amount of time this takes will depend on the temperature of your home. It should take between four to seven hours.

Marinate Chicken

After you have the bread thawing, you can marinate the chicken. Place the chicken breast in a bowl and toss with caesar dressing. Cover and place in the refrigerator to marinate until the dough is done rising.

Remove the chicken from the fridge when it’s time to heat the grill. This will give about 15 minutes to remove a bit of the chill before grilling the chicken.

Prep the Flatbread

Once the bread is fully risen, preheat the grill to 400 degrees F. While the grill is heating, roll out the dough.

Flour a clean surface and roll out the dough until it’s abou 1/4 inch thick. It doesn’t have to be a perfect circle so don’t stress about that.

Grill the Flatbread and Chicken

Add the chicken to the grill. Cook for 5 to 7 minutes per side, depending on the thickness of the chicken. Remove to a cutting board and cool for 5 minutes before dicing.

Brush one side of the dough with vegetable or canola oil. Place the dough on the grill, oil side down. Grill for 5 minutes. Before flipping, brush oil on the second side. Flip and grill another 5 minutes.

Assemble the Grilled Chicken Caesar Salad Fladbread

Dice chicken into small bite-size pieces. Add to a large bowl. Add salad kit ingredients to bowl with the chicken and toss well.

Spread chicken caesar salad onto the grilled flatbread. Cut into triangles and serve right away.

The bread has the perfect char and chew on the outside while it still stays fluffy in the middle. You can even see the amazing fluffy texture in some of the close up photos. We think you’re going to love the combination of chewy flatbread and cool, crisp, creamy salad.

While we adored this chicken caesar salad flatbread, there are so many delicious combinations you could create for variety. Here’s some fun ideas:

Buffalo Chicken Salad Flatbread: Use a caesar salad kit but instead of marinating the chicken in caesar dressing, make grilled buffalo chicken instead.

Southwest Chicken Salad Flatbread: Grab a southwest salad kit and top with margarita chicken and fresh pico de gallo.

BBQ Chicken Salad Flatbread: Use a bbq salad kit and slather the chicken in barbecue sauce as you grill it.

Flatbread Pizza: Skip the salad and make a pizza with the flatbread. While the second side of the flatbread is grilling, slather the already cooked side with your favorite sauce then top with cheese and toppings. Close the lid of the grill and cook until the cheese is gooey and melted.

  • 1 loaf Rhodes bread dough
  • 2 large boneless skinless chicken breasts
  • 1/3 cup caesar dressing
  • 1 caesar salad kit
  • vegetable or canola oil, for brushing crust

Instructions

  • Spray a loaf pan with nonstick spray. Place a frozen Rhodes loaf in prepared pan and cover with plastic wrap (sprayed with nonstick spray). Let dough rise until doubled in size. This will take four to seven hours.
  • After prepping the dough to rise, add chicken to a bowl and 1/3 cup of caesar dressing. Stir to coat. Cover and marinate in the fridge while the dough rises.
  • Once dough has risen, preheat grill to 400 degrees F. On a floured surface, roll dough out to 1/4-inch thickness. Brush one side with oil. Place chicken on the grill. Grill chicken for about seven minutes per side, or until juices run clear. Let chicken rest on a cutting board while cooking the flatbread.
  • Place flatbread, oil side down, on the grill and cook for five minutes. Brush second side with oil. Flip and cook another five minutes. Remove from grill.
  • Dice chicken then place in a large bowl. Add salad kit ingredients and toss well. Spread the chicken caesar salad over the flatbread. Slice into triangles and serve right away.
