Are you an edge or center brownie kind of person? I personally love a middle brownie but I’m not going to turn any of them down.
Hot chocolate brownies are a delicious combination of rich fudgy brownie and ooey gooey marshmallows. All the things we love in bornwies and a hot mug of hot chocolate.
Both cocoa powder and hot chocolate mix are used in these brownies to give the ultimate hit of hot chocolate flavor. Plus, an deliciously large amount of mini marshmallows. What more could you want?!
Ingredients for Hot Chocolate Brownies
These hot chocolate brownies are a pretty quick and easy recipe to whip up. Here’s what you are going to need:
Unsweetened cocoa powder: I personally love using a dark cocoa powder for brownies. I love the depth and richness it provides. If you don’t love dark chocolate, use whatever cocoa powder you prefer.
Hot chocolate mix: Grab a canister or a few packets of your favorite hot chocolate mix. I recommend using one that doesn’t have any additional mix ins (like the freeze dried mini marshmallows and such). This will lend more chocolatey goodness and sweetness.
Melted butter
Granulated sugar
Eggs
Vanilla extract
All-purpose flour
Baking powder
Salt
Mini marshmallows
Mix the Brownie Batter
Start by combining melted butter and sugar. Whisk together for a minute or two to help break down the sugar granules. Add eggs and vanilla and whisk again until combined.
Fold in the cocoa powder, hot chocolate mix, flour, baking powder and salt. Once the batter just comes together, stop mixing. If you mix too much you’ll end up with tough brownies.
Bake the Hot Chocolate Brownies
Grease a 13×9 pan and spread the brownie batter into the prepared pan. Bake brownies for 25 minutes, or until the top is set but the brownies are not cooked through.
Remove the brownies from the oven and sprinkle the top with the mini marshmallows. Return the brownies to the oven for another 5 minutes. If the marshmallows aren’t toasted enough for your taste, you can turn on the broiler. Just watch them VERY closely because they can burn quickly due to their high sugar content.
Enjoy your Hot Chocolate Brownies
These brownies are best enjoyed straight from the oven. Wait about 5 minutes to allow to cool a bit then slice and serve. The marshallows will be so gooey and the brownies will be hot and perfectly fudgy.
Enjoy with a big mug of hot chocolate topped with more marshmallows of course.
To recreate the warm, gooey experience with your leftover brownies, place a brownie square in the air fryer and air fry at 350 degrees for a minute or two.

Ingredients
- 3/4 cup butter, melted
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp. vanilla extract
- 1/2 cup cocoa powder
- 1/2 cup hot chocolate mix
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 1/2 cups mini marshmallows
Instructions
- Preheat oven to 350 degrees F. Grease a 13×9 pan. Set aside.
- In a large bowl, combine melted butter and granulated sugar and whisk for 1 minute. Add eggs and vanilla and whisk until combined. Add cocoa powder, hot chocolate mix, flour, baking powder and salt. Mix until just combined.
- Pour batter into prepared pan. Bake for 25 minutes. Remove from the oven and spread the marshmallow evenly over the brownies. Return to the oven for 5 minutes. If you want the marshmallows a bit more toasty, turn on the broiler. Watch very closely as they can burn very quickly.
- Remove from the oven and let sit for 5 minutes before slicing and serving. Best when warm and gooey. Store in an airtight container for up to 3 days. To reheat, place in an air fryer and cook at 350 degrees for 1 to 2 minutes.
