Grilled Chicken Caesar Salad Flatbread

With the popularity of chicken caesar wraps, we thought we would create a fun spin on them using delicious flatbread made from Rhodes white bread dough. This Grilled Chicken Caesar Salad Flatbread is super simple to make with just a handful of ingredients.

Ingredients

  • 1 loaf Rhodes bread dough
  • 2 large boneless skinless chicken breasts
  • 1/3 cup caesar dressing
  • 1 caesar salad kit
  • vegetable or canola oil, for brushing crust

Instructions

  • Spray a loaf pan with nonstick spray. Place a frozen Rhodes loaf in prepared pan and cover with plastic wrap (sprayed with nonstick spray). Let dough rise until doubled in size. This will take four to seven hours.
  • After prepping the dough to rise, add chicken to a bowl and 1/3 cup of caesar dressing. Stir to coat. Cover and marinate in the fridge while the dough rises.
  • Once dough has risen, preheat grill to 400 degrees F. On a floured surface, roll dough out to 1/4-inch thickness. Brush one side with oil. Place chicken on the grill. Grill chicken for about seven minutes per side, or until juices run clear. Let chicken rest on a cutting board while cooking the flatbread.
  • Place flatbread, oil side down, on the grill and cook for five minutes. Brush second side with oil. Flip and cook another five minutes. Remove from grill.
  • Dice chicken then place in a large bowl. Add salad kit ingredients and toss well. Spread the chicken caesar salad over the flatbread. Slice into triangles and serve right away.
