Ingredients

  • 3/4 cup butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp. vanilla extract
  • 1/2 cup cocoa powder
  • 1/2 cup hot chocolate mix
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 1/2 cups mini marshmallows

Instructions

  • Preheat oven to 350 degrees F. Grease a 13x9 pan. Set aside.
  • In a large bowl, combine melted butter and granulated sugar and whisk for 1 minute. Add eggs and vanilla and whisk until combined. Add cocoa powder, hot chocolate mix, flour, baking powder and salt. Mix until just combined.
  • Pour batter into prepared pan. Bake for 25 minutes. Remove from the oven and spread the marshmallow evenly over the brownies. Return to the oven for 5 minutes. If you want the marshmallows a bit more toasty, turn on the broiler. Watch very closely as they can burn very quickly.
  • Remove from the oven and let sit for 5 minutes before slicing and serving. Best when warm and gooey. Store in an airtight container for up to 3 days. To reheat, place in an air fryer and cook at 350 degrees for 1 to 2 minutes.
